Just harvested and ran out of vat space. Still have roughly 1/2 ton.
What I harvested had the following measurement:
Brix: 25
Ph: 3.7
TA: 4.0 g/l
Very clean grapes. Only sprayed with sulfur (stopped several months ago to avoid residual sulfur getting into vat), MilStop, Stylet Oil and OxiDate 2.0 (hydrogen peroxide).
